Description

Everyone needs an easy family-friendly 30-minute dinner that’s comforting and nourishing. This one cooks right in a skillet, then gets finished in the oven alongside Texas Toast so everything is done at the same time. 

Ingredients
  • 1 pack (22 oz) cheese tortellini
  • 2 tsp olive oil (divided)
  • 1 lb lean ground turkey
  • 1 tsp Italian seasoning
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 medium zucchini (cut into half-moon slices)
  • 1 jar pasta sauce (24 oz jar)
  • 1 cup cottage cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 box Rudi’s Texas Toast
Instructions
  1. Preheat the oven to 450 degrees. Cook the tortellini in a pot of boiling water according to package directions.
  2. Meanwhile, in a large oven-safe skillet, heat 1 teaspoon of the oil. Cook the ground turkey and break it up into crumbles as it cooks. Season with Italian seasoning, salt, and black pepper. Continue to cook until no longer pink, about 8 minutes. Remove the cooked turkey to a plate. 
  3. Add the remaining 1 teaspoon oil to the same skillet. Once hot, add the zucchini; saute until tender, about 5 minutes.
  4. Return the ground turkey to the skillet with the zucchini and add the pasta sauce.
  5. Drain the tortellini and add it to the skillet. Gently fold everything together. Then dollop the cottage cheese in small mounds over the pasta. Sprinkle Parmesan over all.
  6. Spread the Texas Toast slices on a lightly oiled baking sheet.
  7. Bake both the Texas Toast and the skillet pasta for 6-8 minutes, until heated through and golden brown. 
  8. If desired, garnish with fresh basil. Enjoy!
